Easter Chocolate Fairy Cakes

Fairy cakes are tasty but this chocolate fairy cake recipe for kids is delicious.  Remember to always follow the Kitchen Monsters Code when you’re in the kitchen!

Ingredients: 150g x dark chocolate, 175g butter, 1 x tbsp syrup, 175g x self-raising flour, 25g x cocoa powder, 125g x soft brown sugar, 2 x eggs, 100ml x milk, 100g x icing sugar, Mini Eggs
Equipment: Paper cases, muffin style baking tray, mixing bowl, microwaveable bowl

Preheat the oven to 160C / G3
Heat 100g of the chocolate, 125g of the butter and the syrup in the microwave until melted
In the other bowl add the flour, cocoa and sugar together
Beat the eggs together with the milk and add to the cooled chocolate mixture
Add in the flour mixture and stir well
Spoon into the cases and bake for about 20 – 25 mins, remove them and leave to one side to cool
Melt the remaining chocolate then while that’s cooling, beat te remaining butter and the icing sugar together with a little milk (about 1 or 2 table spoons should be enough but see how it goes)
Add the cooled chocolate and mix well
Spoon it onto the fairy cakes and add the Mini Eggs on top to finish
Serve and enjoy!

Kitchen Monster Tip: When the cakes looked baked, slide a knife directly into the top of them, if it comes out clean, they’re ready otherwise pop them back in for another few minutes
