Cranberry Oatcakes

If you like oatcakes you’ll love this Cranberry Oatcake recipe for kids!  It’s really easy to get right and you can serve them with soup, a little cheese or just by themselves as a snack.  What’s your favourite topping?  Leave us a comment below to tell us.  Remember to always follow the Kitchen Monsters Code when you’re in the kitchen!

Ingredients: 225g x oatmeal, 1/4 tsp x bicarbonate of soda, 1/4 tsp x salt, 25g x dried sweetened cranberries, 1 tbsp x butter, 150ml x water
Special Equipment: Large baking tray, mixing bowl and spoon, round cutter (or an upturned glass)

Cranberry Oatckes RecipePre-heat the oven to 170C
Add all the ingredients into the bowl and mix well until it forms a sticky dough
Sprinkle a little oatmeal onto a clean worktop and tip out the dough
Flatten with your hand or a rolling pin until it’s about half a centimeter thick
Cut out your circles and transfer onto the greased baking tray – they won’t expand during cooking but you should leave at least a cm between each one
Bake for 20 minutes or until they begin to turn golden brown
Serve and enjoy or keep in a tin for a day or two

Kitchen Monster Tip:  Flip the oatcakes half way through cooking to ensure both sides cook evenly
